Cheesy Ham and Bean Soup - A Krazy Original

Sometimes I just start throwing stuff together and hoping for good results, and once in awhile this results in a fantastic concoction. This is the case with this recipe, super easy, costs right around $25 (but there are always leftovers), and only requires 6 ingredients and a crockpot. I invited my mom to come and have dinner tonight because this is one of her favorite dishes that I make.

Ingredients

2 pounds of ham cubed
3 cans of campbells cheddar cheese soup
3 pounds of great northern beans or navy beans
Carrots (sliced thinly)
1 medium Onion (finely chopped)
A few garlic cloves
Black pepper to taste

I prefer precooked ham and then bake it for about 20 minutes at 350 degrees Fahrenheit before cubing it. I also prefer beans that are precooked, but have used fresh beans, and soaked and sorted myself, it lengthens the cook/prep time quite a bit but works just as well. After cutting up all the ingredients you simply throw it in a crockpot, i cook on low for about 6 hours, stirring once an hour or so and serve with crackers or bread and butter. If you don't have a crockpot it can be cooked on an open flame, it just requires stirring more often because the soup is cheese based and will burn if not disturbed (stirred) frequently enough. I have added potatoes in the past but with the beans and ham the potatoes make it a bit too heavy for my taste, corn worked ok as an addition though.
