EasyDex Photography Challenge- Mostly White
Hello everyone! It has been a while since I've shared a recipe, so here it is finally. This is my entry for the EasyDex Photography Challenge by @boyerobert - the theme is mostly white with a hit of color.

I made these coconut balls yesterday evening (totally unrelated to the Valentines day) I already ate more than half of them. That's why the plate is so empty. :)
First of all a warning, I made this recipe up and I'm no expert. Most recipes online require sweet condensed milk which I can't find here, so I had to improvise.
The Recipe
2 biscuits crumbled
100ml whip cream (the liquid one)
2 1/2 tablespoons brown sugar
100g coconut flour, leave 3 tbs for rolling
Almonds cut in halves
Makes around 12 medium sized, you can make more small ones.
Brown sugar adds a bit of caramel like flavor, but you can use white sugar. The whip cream I used has 11% sugar. If your cream is sweeter, you will need less sugar. You can add more biscuits if the like them and if the "dough" is too liquid.
If you substitute sugar with honey, you don't need to warm the cream.
Warm up the cream on the stove until the sugar melts completely (idk if you can use microwave). Afterwards remove from heat and add the coconut flour and the crumbled biscuits. Mix well and then form balls, add the almond pieces in the centers. I recommend 2 halves, instead of 1 whole almond, it's just preference. If you make bite size balls, add only 1 half almond per ball. Once you're done, roll the ball in the additional coconut flour and put them in the fridge to harden a bit (around 15 min). I put mine in a container in the freezer for 5 min as I didn't want to wait too much. :)
