Starter Monday - (soups and starters)
When winter is knocking at our door and cold weather kicks in, what better food is other than a good bowl of soup?
Here is a healthy beans soup recipe, all veggies, safe for vegans. Some of my friends call this dish vegan chili, I don't know how correct it is, I call it soup.
Here is the bowl I am about to savor in the next 5 minutes.
I used a bag of dry beans I bought in the supermarket. Soaked it in water for a couple of hours, and boiled it on top stove at low temperature for another couple of hours.
This is how it looks fully cooked.
In a separate pot I sauteed onions, garlic, celery and carrots. When veggies got soft, I added a can of crushed tomatoes, as I didn't have fresh tomatoes. I let it cook thoroughly for 30 minutes or so. I added some cooking liquid from the beans pot. When done, I pour the whole content on top of the fully cooked beans. I added a handful of chopped cilantro too.
Then I added salt, pepper, chili powder, paprika, cinnamon, some sugar, cumin, all spice and bay leaves.
Stir well and sample :) until you reach your desired taste. Enjoy!
