Very Green Stir Fry {Veggie Tuesday & Tuesday Lunch}

Hey guys! I hope you are all having a great week so far. I loaded up on lots of beautiful leafy greens at the farmers market this past Saturday, so I have a nice green dish to share with you today for the #dailyfoodphotography Tuesday Lunch theme and the #foodchallenge #veggietuesday! Why not cover all my bases in one dish, right?

Though a stir fry is usually served with rice or maybe noodles, I also grabbed some lovely sweet potatoes from the market and decided to roast those up to add a little healthy complex carbohydrates to my dish. I love all the leafy stuff, but need something heartier to last me through the middle of the day. My actual stir fry had onions, bell pepper, a small hot pepper, fresh ginger, bok choy, lima beans and more mixed greens.

I used just a bit of tamari and rice wine vinegar for a light sauce. Technically there's not much "fried" about it either since I avoid oil in my cooking. I just use a little water or veggie broth to keep my ingredients from sticking to the pan while I cook them. Whatever you call it, I always love a big bowl of yummy vegetables to help me power through the day!
