Unique Filipino Street Food Delicacy: Rice Dipped in Pork Brain Gravy

The original concept of tuslob-buwa (pork brain gravy bubble dip) was a community set-up where people dip their piece of rice wrapped in coconut leaves (puso) onto the boiling pork brain gravy. It originated in Pasil, one of Cebu City's poorer districts. Only during the early 2000s had it become known to outside of Pasil district or outside Cebu through social media.

The tuslob-buwa that got famous in social media was not the one started in Pasil as it has long been abandoned. It was only re-introduced after an enterprising businessman put up his own recipe of tuslob-buwa dish in Tisa. Today, you can find such food stalls in modern locations where customers like tourists and visitors try it.
