Deliciously Sticky Pork Kassler Chops with Salsa Salad Fried Basmati Rice
Every now and then I get a bee in my bonnet for pork Kassler chops, but I get really tired of serving it with the same tired sides, plus I always have to consider sides that my little man will enjoy. The entire plate turned out fabulously, and all the flavours complimented one another perfectly. The chops are incredibly simple to do...
Preheat the oven to 200 degrees Celsius, Line a roasting pan with some foil, (you will thank me later lol) and lightly drizzle it with some olive oil. place the chops into the pan and rub the one side into the oil. On the top of the chops, lightly coat them in some sweet chilli sauce, some ground black pepper and then pop them into the oven, slightly above the middle for 35 minutes. While the chops are cooking, boil up a pot of basmati rice - and once that is done, drain it and let the steam dissipate, because you don't want it to "boil" in the pan just now... you want it to fry!
Throw them in the pan and saute them for a good few minutes and until most of the juices have dissipated. Once the rice is ready and the veg are frying nicely, begin to add your rice. Don't add it all at once! That will cool the pan down dramatically and will add too much moisture causing things to "boil". Add it in increments, the same way you would add cheese to a white sauce. At this point, I also added a few freshly chopped herbs...
Once you have added all the rice, allow it to fry for a good few minutes until golden. Add a little bit of potato spice for seasoning, or just salt - if you don't have potato spice. When the rice is finished, you are done! The avo and feta salad, is precisely that - avo and feta. Nothing else! ENJOY!!
