☕️Breakfast of Champions...... Not quite!

So the other morning I was chatting with @krazykrista and the topic of coffee came up. So I shared with her my daily ritual and she said "Do a post on that". Normally I don't like being told what to do, but when @krazykrista speaks, people better listen.

I've been on a low carb diet for quite some time and feel much better for it. No more indigestion, heart burn, or digestive tract issues. I was in a rut trying to get to my goal weight so decided to give a Keto diet a try. I like to eat, so any diet that limits intake is usually a non-starter for me. I'm not gonna go into the whole Keto diet thing, there is a ton of info on the internet about it.

A popular breaskfast for Keto diet is known as "Bulletproof Coffee" which is nothing more than a high fat low carb drink that will hold you over to lunch. Once again, I won't get into the details behind it, you can Google it if you want to know more. I know, you are thinking, fat in coffee? But take a look at non-dairy whip topping (they can't call it cream). It is just fat and sugar that has been emulsified.

So my daily routine actually starts the night before when I make a pint of coffee. You see my wife doesn't like coffee so she doesn't like being woken up to the smell of fresh brewed coffee, so I make it the night before. Then in the morning I just throw it in the microwave for 2 minutes while I gather the other ingredients. Most days I have my breakfast made and on my way to work within 5 minutes.

So here is my spin on the "Bulletproof Coffee", now mind you I don't actually measure the ingredients, just eye ball it. It is all done in a little mini blender that emulsifies the fats in the hot coffee and gives it that nice frothiness of one of those fancy highfalutin yuppy drinks that people pay $7 for.

I start out by putting about a Tablespoon or 2 of MCT oil (brain food), 1 Tablespoon of butter, and 1 Tablespoon of heavy cream while the coffee is heating up in the microwave. At least that is what the "recipe" recommends. In reality I probably go a little overboard on the heavy cream (4-5 Tablespoons)but I like it. 😛 The recommend using butter and heavy cream from grass feed cows to reduce the amount of toxins from grain feed animals. Grass fed butter is easily obtainable for me, but heavy cream is not.

By this time the coffee is just about ready and is poured in as well. Of course the fats rise to the top as you would expect, while the heavy cream and coffee mix together.

Through trial and error I have learned when you try and blend hot liquids there is a lot of expansion. On my case, the mini blender I have has a cap with drink opening and vent hole. Even with the drink opening closed, it spews out all over. So the solution I have found is to put a piece of cling wrap loosely under the cap so it can expand up, but not leak.
After a few seconds of blending it is ready.

From there it goes into a disposable cup and out the door I go. Why the disposable cup? Well it is high in fat and leaves a greasy residue in a normal travel mug, so instead of dealing with that, I find paper disposal cups much more convenient.

Need some protein in the morning?
Adding some "no sugar added" peanut butter gives it a nice taste if you need to slowly wind off of protein.
Need to wean of of sugar?
There are plenty of sugar substitutes that can be added. I tend to build up a allergic reaction to stevia or erythritol if taken regularly so maybe that is why I use "extra" heavy cream, it gives me that creamer/richer taste.
