Egg noodles with shiitake mushrooms

Hello, my friends!
Today we will cook egg noodles with shiitake mushrooms and vegetables. I have used dried shiitake mushrooms, after soaking, they swell and taste great.
The recipe is simple. Egg noodles can be easily substituted for udon, soba, or funchose.

Ingredients:
● Egg noodles -1 pack (250g)
● Shiitake - 7-10 pieces
● Carrots -1 pc
● Onions -1 pc
● Bell pepper -1 pc
● Garlic -4 cloves
● Soy sauce, pepper, herbs, sesame oil, black sesame, oil, spices - to taste

1.Let's start preparing the dish. First of all, we need to prepare the shiitake mushrooms in advance.
I had dried shiitake. I soaked them in cold water for about a couple of hours. During this time, the shiitake was perfectly swollen and soft. You can safely cook them.
Peel the onions and cut into half rings. Peel the bell pepper from seeds and cut into strips (take half of the pepper, set aside the other for now). Peel the carrots and cut them into cubes or rub them into strips on a grater. Cut the garlic into slices.
Cut the shiitake mushrooms into strips. We quickly fry vegetables in oil. Add hot pepper and soy sauce, you can add teriyaki sauce and / or sugar. Fry vegetables and mushrooms for a maximum of 7-10 minutes. Adjust the spiciness of the dish yourself.

2.Now about the egg noodles. The boiling time of egg noodles depends on the size of the noodles, they are thin and round like spaghetti, and they are wide and flat. I had round thin egg noodles.
Throw the egg noodles in salted water, stir. Boiling time for egg noodles is 3-5 minutes (no more). You can even just put the egg noodles in boiling water, it will cook itself.
If you have thick noodles, cook for a maximum of 7-8 minutes. The noodles cook very quickly and tend to stick together. We discard the egg noodles in a colander and rinse thoroughly with cold water. You can use egg noodles for frying, in salads and as a side dish.

3.Now add the vegetables and shiitake mushrooms to the pan to the egg noodles. Add some black sesame seeds. Cut the remaining bell pepper into strips and pour it here. I added some oyster sauce and chopped cilantro. We'll mix it.

4.Put the egg noodles with shiitake and vegetables on a plate.

These noodles are convenient to eat with chopsticks if you know how to use them.
