We Need Your Help!
We may have bitten off more than we can chew.
That, my friends, is a 5kg wheel of gouda and a 2.5kg wheel of parmesan cheese. When we were on our little road trip last spring, we stopped at {Triple Island Farm](http://www.tripleislandfarm.com/) in Cherryville, BC and bought a small wedge of gouda and a box of crackers for our ride. We didn't want to buy a big chunk of cheese as we didn't have any refrigeration options and we still had close to a week of driving to do.
Well, for a long time we lamented on how we should have got more and last week I decided to see if the farm would ship us some. I called and she said she would, so I asked how long you could store it for and she said forever. I was incredulous but she insisted that if you cut the top off and recover it the cheese will last for a very long time. We were happy with that so I ordered a spiced gouda and a parmesan cheese.
Then we got them and looked online to find out that most places say that a few weeks is all you can store them if you open them. The parmesan will apparently last a lot longer but at $263 including shipping, I want to make sure we don't waste any of it.
That's where we need help.
What is the best way to eat a wheel of gouda and what is the best way to eat a wheel of parmesan?
I tried looking it up and the web only tells us how to store wedges and not the rest of the wheel. I admit that ten pounds of gouda seems like a daunting task, now that it's in front of me but Gerri assures me she will have no problem using five pounds of parmesan.
Still, how do you store this stuff? Looking at it, I don't understand the whole, "Cut the top off the rind and slice what you want." instruction that I received from the matriarch of the Tuijtel family. Can any of you help us out here?
