Yup! This prompt caught my attention. I have been kinda focused on other things lately and have been meaning to do a #freewrite in the mornings but never seem to have the time. This one I can’t let pass by as I have so many muffin disasters under my belt after 10 years as a baker ...

My absolute favourite thing to hear from a customer asking about muffins was “which is the healthiest?“ 🤣🤣🤣 the only accurate answer is NONE! but never was I allowed to say that. Many times I had to carefully step around the subject though I wish I could have said it straight. “No matter what muffin you choose your gonna get fatter!” was always on the tip of my tongue since it was only ever the obese that would ask. I get it, in your mind your trying but not eating it at all is the only healthy choice available. I couldn’t even hint at choosing something else particularly if not a bakery item since none are healthy. It would be a conflict of interest even though I am looking out for the customer I could loose my job over it, think in lost sales terms 🤦‍♂️ bloody corporations!

Though I believe that the choice of not eating a muffin is the best route I did develop a few recipes which were the healthiest possible options. What a disaster most of them turned out to be 😅 only came up with one that actually sold. The issue is that in replacing the fat & sugar of the muffin your left with tart and bitter or savoury flavours. Each replacement has its own nutritional challenges relating to adjustments within the recipe. The healthier you try make the recipe the less satisfying the end result and more complicated of a recipe. Each addition or replacement requires further adjustments to get the desired results.

This one recipe that sold regularly(I signed a contract and am not allowed to talk specific details) I used mashed fruit as the liquid also replacing most added sugar with natural. I used a combination of oil, mostly coconut which offset the bitter flour taste over others. Once I had a decent consistency I added sour cream till it was rich on the tongue and flour bring back the mix’s consistency.
