Good morning my friends, a classic and traditional Greek soup for today that I recommend to everyone to try it , let’s do it step by step

Ingredients

1 lamb liver

3 chopped green onions (keep the white part separate from the green)

1 chopped leek

50 ml olive oil

1 garlic

Or a glass of white wine

1 cup white vinegar

1 ½ k chopped dill (keep the stalks)

5-6 lettuce leaves

Chicken broth (1.2 liters)

2 k clove rice (or candied)

A little rosemary and fresh oregano

Salt Pepper

Preparation

We distinguish the different parts from the liver (lungs, heart, liver, sweets). In a saucepan, boil the heart and the sweets for 4-5 'and the other 5-6', for a total of 10 minutes. Drain and leave to cool. Then chop them finely and keep each one separately.

In a saucepan with 1 tbsp olive oil and medium heat, first sauté the sweets on their own for 2-3΄, then add the lungs for another 2-3΄ and finally the livers and the heart for another 4-5΄. Remove the ingredients from the pot, add the remaining olive oil and sauté the white part of the onion, garlic, dill stalks and leek for 3-4΄, add the liver (without their liquids), salt, pepper, herbs and powder with a little flour (if you want it melted).

Quench with the wine and vinegar, wait for it to evaporate and fill with the hot broth. Skim and simmer for about 30 '. Add the rice and when it is almost boiled (10΄) and add the lettuce for another 2-3 '.

Finally, cut the soup into eggs.

For the eggnog

2 egg yolks

1 kg of mustard

Juice of 2 lemons and zest of 1

1 kg corn flour

Salt Pepper

Preparation

Beat the yolks with the corn flour in a bowl with the salt, pepper and mustard (and a few drops of cold water) for about 1-2΄, until they swell. Add the lemon juice and zest and slowly with a ladle add 1/2 of the broth of the pot, beating constantly.

Then, pour the eggnog into the rest of the soup, shaking the pot for 1-2 'on the eye. Remove from the heat, add the green part of the onion and dill, correct the taste if necessary and serve.
